Microwaved chopped apples with orange zest + spices (sugar-free, gluten-free, dairy-free, vegetarian)

When you find soft or blemished apples in your refrigerator, don’t compost them—cook them! This recipe works with firm apples too. Great for breakfast, a snack, or dessert.

Ingredients
  • apple
  • small orange
  • ground spices of your choice, such as cinnamon, nutmeg, and coriander
Method
  1. Core and cut away any soft spots or blemishes from the apple. Chop apple into bite-size chunks. Put in a microwave-safe bowl. Set aside.
  2. Finely zest the orange into a small mixing bowl. Add the juice of the orange to the bowl. Whisk in ground spices.
  3. Pour orange juice mixture over apples. Microwave in increments of 1 minute until apples are soft.
