“It’s very easy cookin’ greens”

I think even Kermit the Frog (“It’s not that easy bein’ green”) would appreciate this amazingly easy way to prep and cook your greens—if you’re a microwaver like me, that is.

Wash your greens—beet, chard, collard, kale, mustard, turnip—whole, with the stem on.  Put the whole leaves in the microwave for 40 seconds.  Tear off a piece to test to see if they are done enough (microwave in 15-second intervals until done the way you like).  Then chop (you can include the soft portion of the center stem if you like) and serve.

Serving tips:

  • Mix with leftover pasta or cooked rice and top with marinara sauce or salsa.
  • Add to a bowl of already prepared soup or stew.
  • Stir in toasted sesame oil and soy sauce for a salad or side dish.
